Mutton Kurma

Now this is totally my version of a mutton kurma. If you really ask me how I landed up in this recipe, the answer is very simple. I just had a little mutton left with me and I was cracking my head on how to get a good volume from this little meat left. Cracked my head for some time and then the idea suddenly occurred to me. Long time back, my mom did this simple trick of adding french fries to some beef curry that she made and it was great. So I thought I would also incorporate that idea to this.

While making the Kurma, I had no idea as to where I was going. The old mix and match technique was what worked out here and trust me , while cooking, trust your instincts, it would turn out to be great. There is a little secret in here too. I have added in broccoli , so that my kids get in that great nutrient and they never knew it was in there!

Mutton Kurmas

This was such a huge hit that I had my kids literally asking for more and more and finally when I showed them the empty vessel, my daughter was crying badly that she wanted more!!!! My son came up to me and said to me secretly” Mom , can we make this everyday!!!”  I was so happy at the same time felt bad, that when they asked for more, it was not there.

A very simple recipe with little ingredients. The french fries are homemade and I made them both. A perfect combination with any main course that you would love to have.

Mutton Kurma with fried chips

Serves  2-3

Ingredients

For the marinate

300 gms Mutton Chops

1 tbsp Coriander powder

1 tsp black pepper powder

1 1/2 tsp Chilly powder

1 tsp Garam masala powder

1/2 tsp turmeric powder

2 tbsp thick Curd

Salt to taste

For the Gravy 

2 medium sized Onion finely sliced

2 -2 tbsp Broccoli very finely chopped

1/2 tsp finely chopped ginger

4-5 cloves of garlic finely chopped

1-2 tsp Soya Sauce

1 tsp Worcestershire  Sauce

1 tbsp Coriander powder

1 tsp meat masala powder

2-3 tsp Kashmiri Chilly powder

1 tsp finely chopped parsley

1 tsp finely chopped Dill

1 tsp finely chopped coriander leaves

Few mint leaves

Salt to taste

For French Fries

3-4 large potatoes cut into thin strips

1 tsp salt

Water

Oil for frying

Method

. Clean the mutton chops and marinate them with the ingredients for marination and keep aside for about 30-40 minutes.

. In the mean time, clean the potatoes and cut them to thin strips. Put them into clean water with salt and keep aside for some time.

.  After 40 mins, cook the marinated mutton in a pressure cooker till mutton is very soft. I cooked for about 8-11 whistles.

. Once cooked, and the pressure completely released, separate the stock and keep aside. Slightly crush the soft mutton pieces with your fingers.

. On to a hot pan, add some oil. To this add the ginger and garlic and saute till it begins to brown.

. Then add the onions and saute till soft and tender. Make a paste with the coriander powder, meat masala powder, kashmiri chilly powder, soya sauce and Worcestershire sauce. If required, just add a drop of water.

. When the onions are soft and tender, add this paste mix and mix well. When the raw smell fades, add in the stock and a pinch of salt and let it simmer.

. Once the gravy/ sauce starts to get reduced add in the mutton pieces along with the leaves keeping aside a little for garnish.

. Mix well and when the gravy coats the mutton pieces, take off from flame.

. For the french Fries – In a deep bottom pan, add oil for deep frying. When oil is very hot, fry the potatoes that were being in the salted water. This helps in the getting the potatoes crispy.

. Serve hot by topping the mutton with some french fries. You could even mix the french fries with the mutton. Enjoy the dish.
