Omelet Dosa

Dosa is a staple food in South India and you could find it as a breakfast serve in most of the houses. Dosas is also known as fermented pancake made from rice batter. As I always say, my goal is to get my kids have maximum intake of veggies, in the most creative way and in which they like, so they stay healthy and I am happy when they have it. This is one of the ways that I do to get them have a healthy breakfast with all nutrients in it. A perfect breakfast.

Serves – 4-5

On the panIngredients

Rice   – 3 cups

Urdu Dal  –  1 cup

Salt

Water.

Eggs –  3 nos

Grated carrot – 1/2 cup

Grated broccoli – 1/2 cup

Thinly sliced Spinach – a handful

Coriander leaves – a handful

pepper – 1 tbsp

Tomato Sauce – 1 1/2 tbsp

Milk – 1 tbsp

Method

. Soak the rice and dal for about 4-5 hours.

. Drain the water and grind the mixture to a smooth batter consistency. Not too thin and not too thick. Add salt.

. Allow the batter sit overnight . ( For best result grind the contents in the evening) . With this measurement you could make dosas or idlis for two days. For the dosa, just add a little water,if the batter is thick.

. In a bowl beat the eggs and add all the veggies, milk, sauce, coriander leaves, salt and pepper and give a good mix. Keep it aside.

. Place pan on flame and very hot, lower the flame and pour a big spoonful of batter on the pan and rotate till a thin base is formed.

. Sprinkle some oil or ghee and then pour about 2 tbsp of the egg mix on top of the base.

. Cover with the lid for a few minutes , so that the egg gets cooked well.

.  Flip the dosa and let it cook for a few seconds on the other side.

. Serve hot. Either could serve with a chutney or without chutney. Both tastes good.
