It is fasting season now for us during Christmas and hence non-vegetarian is out for some time in my kitchen, till Christmas. Getting my kids into these vegetarian kind of food is not that easy and hence I need to keep myself innovating something new all the time. Two days back, for dinner I had to make up something that my kids would have and I was breaking my head on what I should be making. Even my hubby would be there for dinner, so had to be something different. Thought for a while and then as usual, started in search of the available ingredients.
On my search I came upon some mushrooms and fresh cream and finally some spaghetti left in the pantry. So then I thought I would combine these to make something really yummy. thought for a while and then started on my experiments.
The moment the sauce was ready, my kids came running into the kitchen and was asking what was special. The kitchen had a great smell from this sauce and it was really wonderful. After kids buzzing around and my daughter not leaving the kitchen, I finally managed to complete the entire dish. It was really nice and perfect for the cool winters.
A very simple and easy dish, that just takes few minutes and ends in a great meal.
Servings – 4-5 people
260 gms Long Spaghetti
2-3 cups water
1 cup button mushrooms cleaned and sliced into medium size pieces
2 cloves finely chopped Garlic
1 medium sized onion finely chopped
2 tbsp Olive Oil
1/2 cup Chicken Stock ( optional) or water
1 1/2 cup Fresh Cream
2-3 tbsp Freshly chopped coriander leaves.
Pepper powder – 2 tsp
Salt – 1 tsp
. Heat a pan. To this add some olive oil and saute the mushrooms, onion and garlic till mushrooms turn golden brown and onions are soft.
. To this add the Chicken broth or water, cream and about 2 tbsp finely chopped coriander leaves and simmer for five minutes.
. Add salt and pepper powder to this and let it be on simmer for another 2-3 minutes.
. Turn of flame and keep aside the prepared sauce
. In the meantime, spaghetti could be cooked. Either cook as to packet instructions or boil water in a deep bottom pan with salt. To this add the pasta and let it cook it soft and tender. Drain and run cold tap water immediately to stop cooking. Sprinkle some oil and toss so that it does not stick to each other.
. Once the spaghetti is ready, add the sauce to the pasta and toss well.
.Garnish with some chopped coriander leaves and serve hot.
