Mutton is not so common at our home. But once in a while we do buy and though I had made it many time before this post, I was not happy with the photographs that I took with them. So after studying for a while, and trying my luck this time, I finally got something that I am satisfied, though it may not be excellent…..
No matter what, meat is meant to be spicy at our home and yes this too was very spicy. It went a bit too much that my kids found it a bit too hot for them…but they managed, afterall mutton right …lol…. Though I did not have a specific plan in how to make the mutton, the idea of my Amritsari chicken suddenly crossed my mind and so I decided, I would add in some of the mix and matches from that recipe and I blended it into this mutton. Trust me, it was worth the try. The thick gravy and spices made it really yummy.
Servings – 6-7
For the marinate
500 gms Mutton
1 tbsp Coriander Powder
1 tbsp Red Chilly Powder
1 tbsp Pepper Powder’
1 tsp Turmeric powder
1 tbsp Meat Masala Powder
1 1/2 tsp Garam Masala
1/2 tbsp Salt
For the Gravy
3 medium sized Tomatoes
1 medium size Onion
1/4 cup Fresh Cream
1 cup onions finely chopped
1 tbsp finely chopped ginger
1 1//2 tbsp finely chopped garlic
Few Curry leaves
Coriander and Mint leaves for garnishing
. Marinate the mutton with the ingredients mentioned for marination and keep aside for 15-20 minutes.
. Then cook the mutton in a pressure cooker till it is soft and tender. This may take some time. Keep this aside.
. In the meantime, blend the tomatoes and onion together to form a paste and keep it aside.
. Onto a hot pan, add some oil, saute onions,curry leaves, garlic and ginger till onion turn turns translucent and soft.
. To this add the tomato-onion puree and cook the paste till oil separates. Add some salt to this mix.
. Once the oil separates, add about 1/2 tbsp each of coriander powder and meat masala powder. Mix well. To this add the cooked mutton pieces along with the stock.
. Let the water reduce to form a thick gravy. Add the fresh cream at this stage and give a good mix.
. Turn of flame and garnish with finely chopped Coriander and mint leaves.
. Serve Hot.
