It has been a wonderful journey of my one year in blogging. Though I was very much unaware of blogging when I started, each day was great through this journey as I learnt so many things from my fellow bloggers. They have been of constant support, encouragement and guidance and still continues to be. I believe. without all those likes, support, encouragement and motivation, I would never had made this far. Carrot Halwa or commonly called as Gajar Ka Halwa in India , is a common Punjabi dessert made with carrots and milk as the main ingredients. It tastes really great and the best combination is along with Vanilla Ice-cream. When I made this, it took me back to my engagement day where the dessert served was Carrot Halwa with Vanila Ice-cream and gosh… it just got over so fast.Even today, when our friends and relatives talk about it we have water running in our mouths!!!!
Though I tried making once, some time back, it did not turn out good and so I dropped it. But this time I had some carrots with me and so I thought I would give a try once again. Trust me friends, this recipe does require a lot of patience and time to get it to the perfect consistency and that yummy taste. But for all the effort that you take, it is worth a million times. The procedure is simple, but time consumption is a bit more. I made it a point that the entire process was done on low heat, if you wish to do on high heat, you may, but keep a watch.
My family just loved it and my kids had a bowl full. What better way to get them have some carrots and milk. Lol…..I substituted condensed milk for Sugar. If you want it to be more sweet, go ahead with Sugar .
This is a true winner at all times and for all occasions.
Servings – 7-8
8-9 medium sized carrots shredded
600 ml milk
1 tin Condensed milk ( Can substitute with 1 cup sugar)
1 tsp cardamom powder
3 tbsp of Butter
Cashews, raisins and Pistachios for garnish.
. In a deep bottom pan, heat about 1 tsp butter and roast the cashews and raisins and keep aside.
. In the same pan, once the cashews and raisins are taken out, add in the remaining butter and the shredded carrots. Saute and let the carrots get tender and change color.
. Once the color changes, add in the milk. Let the carrots cook in milk and get the milk reduced.
. Once the milk reduces to about half, add in the condensed milk, cardamon powder and the roasted cashews and raisins and mix well. Stir in occasionally.
. Allow the milk to reduce more till the halwa starts to leave the sides of the pan and gets a bit thick.
. Switch off the flame and transfer them to either serving dishes or to a tray that has been greased with some butter.
. Garnish with finely cut Pistachios, cashews or almonds.
. Allow it to cool and then refrigerate for about 1-2 hours.
. Cut them to your desired shapes and enjoy this wonderful dessert with a scoop of vanilla ice-cream. Without the ice-cream also, it is great.
Tips : Carrot Halwa could be refrigerated about one week and if in freezer, upto a month. Before serving, just warm it and serve.
