As all the celebrations are done and I was on a short break for about 4-5 days enjoying the festival of Onam at my In-laws house and my place, I did not have time to refill my pantry. After all the great time, today back at home, I was wondering on what to make for my kids for their evening snack. Since they have their holidays, they always want something to munch on. Thought for some time and went through the items left around.
This time also oats is what caught my eye. So then just searched on what all I could add along with it and came upon this simple energy bars that I made. Very simple and easy and healthy too. You need not bake them, and since it is easy, you could prepare in advance and have them for breakfast or as a snack. Apart from this I have also made the oats coconut energy bites and the oats cake all of which does not require any baking, but very simple to make.
Servings – 5-6
1 cup Peanut Butter
1/2 cup honey
1/2 cup bran oil ( or can substitute with butter)
1 cup shredded coconut
2 cups old fashioned oats
1/2 cup chopped dry fruits
1 1/4 cups dark chocolate chips or chocolate syrup
1 tsp Vanilla extract
. Grease a pan and keep aside.
. In a saucepan, melt the peanut butter, oil and honey. Be very careful as it does have a tendency to get burnt. Stir continuously till melted.
. Remove from heat and to this melted mix add in the remaining ingredients and mix well.
. Pour this mix to the greased pan and refrigerate till set. If you would like to have thick bars, pour them into smaller pans.
. Serve cold or at room temperature.
