Now this is yet another version of my own experiments and is very much different from the normal fried rice . As I always mention, my intention in my cooking is always to incorporate veggies that my kids refuse to have and those which are really good for health.
I make such foods on holidays as they get the aroma and it tempts them to have and moreover I also get more time when compared to the normal working days, where one has to rush with the tiffins. What actually prompted me to give this a try was because I had some spinach which I had bought the other day and I did not want to waste it. A normal stir fry would in no way be successful with my kids, so I was thinking of ways to get it done, when some other veggies also crossed my eyes. That is when this idea struck and I went for it.
Fried Rice is always loved by almost all of us and there would be no other better way to outsmart fussy kids with veggies. So went ahead and made this simple, yet a different version of fried rice along with some crispy Anchovies ( Kozhuva Fry) fry and a very simple salad. A perfect blend to enjoy a good holiday lunch or dinner with your family.
Servings – 5-6
Basmati Rice – 1 cup
Spinach finely cut – 1/2 cup
Broccoli finely cut – 1/2 cup
Red Bell pepper cut into small cubes – 3/4 cups
Yellow Bell pepper cut into small cubes – 1/2 cup
Green Bell pepper cut into small cubes – 1/2 cup
Lemon Juice – 2 tbsp
Coriander Leaves finely chopped – 1/2 cup
Parsley Leaves finely chopped – 1/4 cup
Onions chopped – 1/2 cup
Green Chilies – 3-4 nos
Garlic – 3 cloves
Pepper Powder – 2 tsp
Soya Sauce – 1/2 tbsp
Salt to taste
Butter – 2-3 tbsp
Oil – 1 tbsp
Cashews and raisins – a few for garnish
Water – 2 1/2 cups
(Note : Bell Peppers refers to Capsicum , I had a few of my readers asking me as to what bell pepper were)
. Wash the rice thoroughly and in a heavy bottom vessel, cook rice along with water, some salt and lemon juice. Cook till the rice separates and strain immediately when cooked. Keep aside.
. In a pan, heat about 2 tbsp pf butter and oil. To this add the onions, chilies, garlic and bell peppers and saute well. Keep it covered so that the bell peppers get softened.
. When done, add in the spinach and broccoli and saute well. Add Salt and pepper powder to it and mix well till all veggies are cooked.
. In another pan, heat about 1 tbsp butter and to this add in the cashews. When they start to change color, add in the raisins and mix well. Turn off and keep this aside.
. In a bowl, put in some rice, then the veggie mix, some coriander and parsley and some soya sauce and mix well. Keep doing this till the entire content of veggies and rice are mixed well.
. Garnish with the cashews and raisins and with some coriander and parsley leaves.
. Serve hot with sauce, salad and crispy fried Anchovies ( Kozhuva Fry) .
