Today is a very very special day in our lives. Three years ago, we were blessed with our little princess and now after all those sleepless nights and diaper changes, she is a busy buzzing bee now. How fast time flies by? I still remember the first moment I saw her sweet little face. Those are the best moments of life. So today, we have a small get together with my parents,brother and my sister and her family. My In-laws could not make it as they could not travel the long distance ( they are aged), but definitely their blessings would be with her.
So I was wondering what to make and that is when I stumbled upon this wonderful recipe. Though I have made changes to my choice, the outcome was great… My lil one is desperately waiting to be evening to cut the cake !!! The Twist is that, I am all excited and I made the butter icing for the first time !!!! and did the writing for the very first time in my life !!!! Oh..I never expected I could do it….So finally did that too….
Recipe adapted from Yummy Foods by Lubna Karim. She had chocolate icing, but I made changes to butter icing.
Serves – 6-7
Dates pitted and chopped – 20 nos
Eggs – 2 nos
Chocolate – 1 full bar ( I used Dairy Milk medium sized)
Butter – 1 cup
Vanilla Essence – 2 tbsp
Milk – 1 cup at room temperature
All purpose flour – 1 cup
Caster Sugar – 3 cups
Cocoa powder – 8 tbsp
Baking powder – 1 tbsp
Pinch of salt
Cashews – 1/2 cup
For butter Icing
Butter – 1 cup
Vanilla essence – 2 tsp
Icing Sugar – 4 cups
Fresh Cream – 5 tbsp
. Toss the chopped cashews in 2 tbsp of flour and keep aside.
. In a microwave safe bowl, add in the chopped dates and milk and microwave for 30 seconds on high.
. Add the vanilla essence and chocolate to this and leave it to cool.
. Once at room temperature , add in the butter and blend the mixture to a smooth paste.
. To this add in the cashews and keep aside.
In a bowl, beat the eggs till they are fluffy.
. Mix the wet ingredients to this egg mixture and keep aside.
. Sieve all the dry ingredients together.
. To the wet ingredients fold in the dry ingredients batch by batch and slowly till all the ingredients all well incorporated.
. Grease the microwave pan and dust with some flour.
. Pour in the batter and microwave at high for about 4 minutes.
. Leave it cool completely before flipping to a plate.
To make the butter icing
. Beat the butter till light and fluffy. Then add all the other ingredients and beat well till soft and fluffy.
I made two layers and applied the butter cream mixtures in between the two. Then finally did the decorations.
We enjoyed the second batch that we made. It was very soft and fluffy that my kids just could not wait to have them.Truly a winner….
