As the saying goes, Necessity is the Mother of Invention….so was how I made this simple energy balls. Yesterday we had a reunion in our school after about 16 years !!! and gosh we were all excited. Though many could not make it as they were in different parts of the world, some of us were lucky enough to reunite after these many years. It was really an exciting and joyous moment. I just walked around the school and old memories just came by. All that great moments that I spent in that beautiful building with my friends, could not be traded for anything in this world. It was really nostalgic.
Meeting friends who were once upon a time very naughty, now all grown up, responsible parents all made a great feel. Above all that, meeting my old teachers was truly a blessed moment. When we introduced ourselves, we could see the joy on their faces and they did indeed recognize us !!! A great day with great moments shared …..Truly memorable.
But I could not stay back till the event got over as I had left my two naughties with my mom, who is not that very well. So I returned back after lunch. Being back, I had to put them to sleep and give rest to my poor mom. The first thing they ask when they wake up is, what I have to eat? ….So I was thinking on something that I could quickly make. Just went around in the kitchen and found these 3 ingredients and I had an instant Idea…..Tried my luck, but believe me, these are really very nice and energizing and so much fuller that it keeps your hunger at bay and energizes you. Should try this simple snack.
Serves – 3-4
Instant Cooking Oats – 2 cups
Grated Coconut – 3/4 cups
Condensed Milk – less than 1/4 cup
. In a pan, roast the oats on medium flame. Stir continuously, till the oats start to brown. It should just get a bit light browned, at that moment you could take it off from the flame.
. Cool it (under a fan, if in hurry).
. In a bowl, add in the roasted oats, grated coconut and add condensed milk little by little, while you mix them. The consistency of the mixture should not be too thin or too thick. Just enough for all the ingredients to get mixed well and you are able to roll small balls from it.
. Shape them to your desired shape. I had no time, so made them into balls for my convenience . You could make them into bars or any other shape you desire.
. Just refrigerate them for about 10 minutes, so that it gets firm.
. You can have them immediately or store them in a tight container and refrigerate them for future use.
A simple snack that could be had at any time of the day, or even be sent to school for a short break.
