Upma is a very common breakfast item in India. There are so many varieties of upma. Semiya or also known as Vermicelli is also one among them. Mostly upma is spicy and vegetarian, but my version has a twist as usual to make my kids have all the veggies that I incorporate. Experiments are what I love and so I do the same with my recipes too…..
I was wondering what to make for breakfast today and that is when I saw this vermicelli packet in my drawer. First I thought would make the actual upma, but then realized, chances of my little ones to have them to their full would be less. On just a search I got the instant idea and I incorporated it…Great… they had enough to their fill and was asking if any left for the evening….
This is a simple dish for every mother who rushes in the morning and have no time to go around feeding kids…. In fact my daughter had this saying it was noodles and she put in some sauce too !!!! Her combination….lol…
You could have this for breakfast, for lunch, dinner or pack for tiffins too….
Roasted Vemicelli – 1 1/4 cups
Water – 2 cups
Carrots chopped small – 1/2 cup
Green Peas – 1/4 cup
Onions sliced – 1/4 cup
Green bell pepper – 1/4 cup finely choppe
Green chilies sliced lengthwise – 2 nos
Coriander Leaves – a bunch
Grated Coconut – 2-3 tbsp
Oil – 2 tbsp
The twist ingredient – Store bought kebab – 1/4 cup ( Venkey`s brand)
. Fry the kebab and keep it aside.
. In a deep bottom pan, add the oil and when hot, add in the onions and chilly and saute well.
. When onions get translucent, add in the carrots, peas and green bell pepper and saute well. Cover with a lid for a few minutes.
. To this add the water and salt and let it come to a boil.
. When vegetables are cooked and water begins to boil, add in the roasted vermicelli ( readily available in stores) and just stir.
. Wait till the vermicelli gets cooked and the water reduces. To this add the fried kebab.
. Give a good mix and when water is completely reduced, add in the grated coconut and mix.
. Turn off flame and add in the coriander leaves and mix.
. Garnish with a little more coriander leaves and serve hot.
Perfect meal for any time of the day…..
Note : For vegetarians, the kebab could be ommited and if desired add in fried mushrooms. You could also make a twist…
