It is evening now here and my kids are running around asking for something to munch. Since I have not visited the supermarkets yet, I don`t have much in stock. So I was thinking what I should make to get them happy and full. On my search I found this packet of Puffed Rice ( commonly called as Pori in Kerala) . Thought for a while and came up with just the basic ingredients at home.
Puffed rice was very common during my childhood days and we used to have it just like that. It is very tasty and not a fast food. Since it is a cloudy day today and my husband arrives in the evening, all hungry… I thought I would get something different for him too……. Here is the simple 7 minute snack that your family would love.
Serves – 3-4
Puffed Rice – 2-3 cups
Eggs – 2 nos
Onions finely chopped – 1 cup
Tomatoes finely chopped – 1/2 cup
Green chilly – 2 nos finely chopped
Lime Juice – 2 -3 tbsp
Coriander leaves and mint leaves finely chopped – 2 tbsp
All herbs – a pinch
. Boil the eggs and keep aside.
. In a bowl, mix in all the other ingredients.
. When the eggs are boiled, peel them off under running water, cut them into halves and either mix it along or serve as toppings.
. Serve immediately.
Your crunchy evening snack is all ready within minutes.
Tip: If you are a vegetarian, just skip the eggs, it tastes good even then.
