Brussels are our favorites. We don’t happen to get them frequently, but sometimes, you see them in some stores and whenever I see them, I just buy them. They are very healthy, with lots of nutrients .They fall into the family of cabbages. Though small, they are easy to cook .
Brussels have lots of health benefits. According to World Health Foods , Brussels sprouts helps in cancer prevention .Stir fry or steaming are the best options to cook, so that the nutrient value is not lost.
In order to get my kids have these without creating much fuss, I added eggs and broccoli was my twist, so that they have all the good greens together. I have made brussels sprouts before too, but have never tried adding broccoli or eggs. It was great and my kids loved it…
I grated the broccoli, so that my lil ones do not pick them up to throw.when grated they blend very well.Need to outsmart them…lol….
Brussels Sprouts – 1 cup
Broccoli grated – 1/2 cup
Eggs – 1 no
Onions finely chopped – 1 cup
Ginger finely cut – 1 tsp
Garlic – 2 cloves
Green Chilies – 2 nos
Mustard seeds- 1/2 tsp
Grated Coconut – 1 cup
Turmeric powder – 1/2 tsp
Pepper powder – 1/2 tsp
.Wash the sprouts and let them drain.
. In the mean time, in a food processor, process the onions, green chilies, ginger and garlic and keep aside.
. Once water is drained, cut sprouts into halves and process them in the processor till finely cut.
. On to a hot pan, add some oil. Crack some mustard seeds. To this ad the processed sprouts , grated broccoli,onion mix, turmeric powder and salt. Mix and keep on low flame.
. Stir occasionally. When the sprouts gets softened, break in an egg, add a pinch of salt and the pepper powder and stir well. This helps the egg in automatically getting formed to a scramble and mix well with the sprouts.
. When the contents are cooked well, juts add in the grated coconut, mic and keep on medium flame for 3-4 mins.
. Turn off flame and serve with hot rice or for filling in a sandwich. Really nutritious.
Note : If you are a pure vegetarian, you could omit the egg. It still tastes good.
