A long vacation has come to a halt and all kids are back to the daily routines of classes, home-works and activities. Well the same implies to Mothers too. Packing lunch boxes and snack boxes is one great task that has to be effectively done and at the same time should be healthy. This is one such kind, which stands different and yet interests your child to have. This recipe was actually suggested by my brother-in-law, when we were talking about different options for Idly`s.
Idly is a one among the traditional breakfast items at almost every South Indian household and most of the time you might have leftovers after the breakfast is done. There are many different options that you could do with those and make an evening snack too. This is one such kind, where you could make it with the left overs and make it an evening snack, pack it to school or even for a change you can have it for breakfast with fresh Idly`s too….The recipe on how to make idly`s is given at Idly Fry link.
All vegetables for this recipe are cut into long thin strips.
Fried Idly Strips – 3 cups ( 8-10 Idly`s)
Capsicum – 1 cup
Tomato – 1 Cup
Onions – 1 cup
Green Chilies – 3 nos
Tomato Sauce – 1 cup
Pepper powder – 2 tbsp
Chilly powder – 2 -3 tsp
Turmeric powder – 1/4 tsp
Coriander leaves finely chopped – 1/2 cup
Mint Leaves – a few
Salt to taste
. Prepare fresh Idly`s and then cut them into long strips and fry them crisp. keep it aside.
. In a pan, heat the oil and then add the onions , capsicum and green chilies and saute well. When tender, add in the tomatoes and saute well.
. To this add the salt and pepper and mix well. When tomatoes are soft, add in the chilly and turmeric powder and mix well.
. Add in the tomato sauce, 3/4 cup of coriander leaves and mint leaves and mix well.
. Turn of flame and then add in the fried Idly`s and give a good mix.
. Garnish with the rest of the coriander leaves and serve hot immediately.
Note : Just add the fried idly`s just before serving or else the Idly`s soak up the sauce and tends to get softer. To have it stay crisp, just add before serving.
