It has started to rain, and finally we are out from the burning heat !!! It is so cool now and on a raining evening, who would not love to have some soft, fluffy, warm steamed rice cakes or Vattayappam`s…. They re my all time favorites and also my family`s. Whenever I don`t have much time and Kids need something to much for their evening , I just get this done soon. It is really easy and tasty and I am sure that almost all Keralites would have made this more than once at their homes.
I use the store bought rice flour. The traditional recipe involves soaking of rice and then grinding them..
Serves – 5-6
Rice Flour – 2 cups
Grated Coconut – 1 cup
Sugar – 1 cup
Water – 1/2 cup
Salt – a pinch
Yeast – 1/4 tsp
Cardamom powder – 1/2 tsp
Cashews and raisins for garnish
. In a blender, blend together the rice flour, grated coconut, sugar and water to a smooth consistency.
. Transfer the mix to a deep bottom bowl and add in the salt and yeast and rest for about 4-5 hours , till the batter rises and gets frothy.
. Grease pans with butter or ghee and pour about a ladle to these greased pans, garnish on top with some cashews and raisins and steam them for about 5-10 mins or till done.
. The Vattayappam rises and could be served when cool.
