Breakfasts are something that I try to make it very nutritious, yet simple. My kids just love these pastas, noodles, macaroni in any format that you make, yet very fussy when it come to vegetables. So today morning, I thought about bringing in this simple pasta for breakfast, with just the veggies that I had at home with a little Schezwan Sauce. This pasta could be made in the non-vegetarian version too by adding chicken, meat , sausages or anything of your choice. The veggie version itself was great, so I guess the non-veg would also be wonderful.
Serves – 3-4
( All vegetables cut into very thin strips for this recipe)
Pasta – 1 pkt – 250 gm
Carrots Sliced – 1/2 cup
Cabbage Sliced – 1/2 cup
Green bell pepper sliced – 1/2 cup
Onions thinly sliced – 1/2 cup
Tomato Sauce – 2-3 tbsp
Schezwan Stir fry Sauce – 3 tsp
Coriander leaves – 1/2 cup
Mint leaves – just a few
Pepper Powder –
Oil – 2-3 tbsp
Water – 3-4 cups
. Boil water, pinch of salt and 2 tsp oil. To this add the pasta and let it cook till soft. When done, drain immediately and run in cold water. Keep this aside.
. In a deep pan, add some oil. When hot, add in the onions, bell pepper, carrots cabbage and little salt and leave it covered on low flame for about 5 mins or till carrots are soft and tender. Since they are very thin, this would not take long.
. To this add the Schezwan Sauce, Tomato sauce, 3/4 cup chopped coriander leaves and the mint leaves and stir.
. Then add the cooked pasta, pepper powder, and salt if required and give a thorough mix till all blend well.
. Garnish with the remaining coarinder leaves and serve hot with additional sauce if required.
A quick and perfect dish for breakfast, snack or even dinner.
