I have two great reasons in making this pudding and presenting it to my parents. Today is Mothers Day and tomorrow is my Dad`s birthday. So we, as a whole family is celebrating both together this evening. So I thought I would surprise them with something special that both of them like and yes, coffee is something they both love.
Coffee feels great and the smell is so tempting. While thinking on what I could get them with coffee, I got this pudding run across my mind and I just got to the store to get the essentials and made it in a jiffy.
So here it goes for my Special, Lovable Parents, who has guided me and been with me all through my life….. I love you both…..
Serves – 8-10
Instant Coffee Powder ( I used Bru Instant Light) – 7- 8 tsp
Condensed Milk – 1 tin
Fresh Cream – 2 cups
Gelatin – 4 tbsp
Boiling Water – 3 cups
Cold Water – 1 cup
Sugar – optional
Dark Chocolate Shavings
Cherries – Optional
. Soak the gelatin in cold water and keep aside for 10 minutes.
. Boil the water and make coffee with it. ( You could add sugar if you want as Condensed milk is already sweet. (I used just 2 tsp for taste)
.Add the soaked gelatin in a small quantity of the hot coffee mixture and mix well. Then add the entire coffee mixture.Keep aside.
.Add the condensed milk in it.Mix well until combined.
.Whip the fresh cream in the cold stage until soft peaks and then fold in the warm coffee mixture in small quantities into this cream mixture.
.Pour the mixture in a pudding bowl and refrigerate for 3-4 hours until it sets.
. Spread a thin layer of chocolate shavings as topping and decorate with cherries if desired.
. Serve chilled.
