Its Vacation time and keeping your kids tummy full is no easy task. I have been trying various recipes from day to day for them and now they are truly enjoying their holidays playing and eating. It is so nice to see them have something they love the most and that which is healthy. This snack cake is one such recipe. I had this recipe with me for sometime, but never tried it. This recipe was actually received from the net while surfing, but since it has been long I do not recall from which site.
However, I have made my own alterations with the ingredients and so I could definitely say it is again my own version of an experiment. But trust me , the best snack cake, that could be used for breakfast, tea-time or even for a snack bite ! Healthy and tasty. Moreover it just takes a few minutes to get this done.
Now I shall mention here what the actual recipe calls and what I had substituted as to what I had in my house….You could try with either or both and let me know which one you liked….:)
Serves – 3-4
Actual My Version
Softened Butter – 1 cup Oil – 1 cup ( do not use coconut oil)
Oats – 1 1/3 cup Oats – 1 1/3 cup
All purpose flour – 1/2 cup All purpose flour – 1/2 cup
Brown sugar – 1 cup Brown Sugar – 1/2 cup and White Sugar – 1/2 cup
Chopped walnuts – 1/2 cup Chopped Cashews – 1/2 cup
Eggs – 2 nos Eggs – 2 nos
Vanilla extract – 1 tsp Vanilla extract – 1 tsp
Semi sweetened chocolate morsels – 1 pkt Powdered chocolate biscuit
( Hide and seek) – 3/4 pkt
. Combine all ingredients except chocolate morsels or Powdered biscuits.
. Beat 3 minutes at medium speed of electric mixer until creamy.
. Stir in 1 cup chocolate morsels or Powdered biscuits.
. Mix well and spread on a microwaveable dish.
. Microwave at HIGH 4-5 minutes or till top becomes dry.
. Sprinkle remaining chocolate morsels over top of warm cake. Let stand for about 10 minutes; spread over cake. Cool. Cut into squares. ( I sprinkled the powdered biscuits and it was great since it was not too sweet. If you want it to be sweet, you may use the chocolates )
. Serve either hot or cold. You could even store it for the next day.
A very simple one that just takes a few minutes.
