Last day I was totally involved with my work that I totally forgot we did not have much curry for supper. By the time I completed my work and got to the kitchen I was totally wondering what I could cook up soon. Just going through my refrigerator, these colorful bell peppers caught my eye and I thought of an idea. That is how this dish popped up. It is very easy and simple and just takes about 15 mins in total for the dish to get prepared and it really is very tasty. Serves – 3-4
Green bell pepper diced – 1 cup
Red bell pepper diced – 1 cup
Yellow bell pepper diced – 1 cup
Grated Coconut – 3 tbsp
Onions diced – 1/2 cup
garlic – 2 cloves
Ginger – a small piece
Red Chilly – 3 nos
Turmeric powder – 1/2 tsp
Mustard seeds – 1/4 tsp
Curry leaves – a few
Salt to taste
. Cut all the bell peppers and other ingredients and keep ready for easy cooking.
. In a hot pan, pour in some olive oil. ( I used olive oil here, coz bell peppers tastes good in it). When oil become hot, crack the mustard seeds.
. To this add the red chilies. Then add in the onions, garlic, ginger and curry leaves and stir well.
. Then add the bell peppers, turmeric powder and salt as per taste. Mix well and cover for a few minutes so that the bell peppers get softened with the help of steam from inside.
. After a few mins take of lid and stir occasionally. Once the water content is reduced, add in the grated coconut and mix well. Leave on low flame for a few minutes.
. Take of from heat and serve hot. A perfect side dish.
