It is Jack-fruit season in Kerala and there are plenty of them available. However in cities, you get only a few. Last day I happened to get some jack-fruit and of course, not only the fruit but the seed is also used in cooking various types if dishes. However, this is one of a kind as again I just tried a new combination and it was good.Had little spinach also, so since both were only little, I thought I would combine both. It was indeed good. here is how to make it, my way …..lol
Serves – 2-3
Jackfruit seeds – 8-9 nos
Spinach – 1 cup
Onions – 1/2 cup, finely chopped
Garlic – 3 cloves finely chopped
Ginger – 1 tbsp finely chopped.
Red Chilly – 3-4 nos
Curry leaves – few
Mustard seeds – 1 tsp
Shredded Coconut – 2 tbsp
Salt to taste
. Clean the jackfruit seeds well and keep them for drying. Once dried, peel their skin and cut them length wise to small strips.
. On a hot pan, pour some oil. when hot put in the jackfruit seeds and cover with a lid and keep on low flame, stirring occasionally. When fried well, take off from flame.
. In another pan, add some oil. Crack some mustard seeds. To this add the onions, garlic, ginger , red chilies, curry leaves and give a good stir.
. Then add the spinach and the well fried jackfruit seeds. Add in the salt.
. When the spinach shrinks, add in the shredded coconut and give it a good mix.
. Turn of from flame and serve hot along with rice.
