These days I have been more into the vegetarian menu as we have the fasting for Easter. In a way it is good and we go more on greens and healthy options and I have discovered a great variety of dishes in the vegetarian area and experimented a lot many. This is one among that and very very simple to make. Tastes very good.
Spring Onions cut thinly – 1 bowl
Green bell peppers – 1 medium made into small cubes – 1/2 bowl
Grated Coconut – 1/2 cup
Onions – 1 small diced finely
Green Chilly – 2 nos, ct length wise
Mustard seeds – 1 tsp
Turmeric powder – a pinch
. Dice the bell pepper and spring onions and keep aside.
. In a hot pan, heat some oil. when hot, pop in the mustard seeds and wait till they crack.
. After they crack, add in all the ingredients except the coconut and stir well.
. When the onions and bell pepper are cooked, add in the grated coconut and mix well.
. Let it be on low flame for about 5 mins and then turn off.
. Serve Hot.
