This was something I came up spontaneously. The other day I happened to see a cookery show where they make a curry with bell peppers alone with coconut. I had these cooked red lentils with me and juts 1 big green bell pepper, so I thought Why not mix them both???? Fortunately it turned out much good than I expected and my kids also had them good.
Serves – 3-4
Ingredients
Lentils – 3/4 cups
Green Bell pepper – 1 big one
Onions – 1 big one diced well
Garlic – 2-3 cloves thinly sliced
Ginger – 1/4 tsp finely sliced
Mustard Seeds – a pinch
Turmeric powder – 1/4 tsp
Shredded Coconut – 3/4 cup
Green Chilies – 2-3 nos slit length wise
Salt
Oil
Method
. Wash the lentils and cook them with salt in a pressure cooker.
. Dice the green pepper and keep aside.
. In a hot pan, pour some oil and when hot add the mustard seeds and let them pop.
. To this add the onions, garlic, ginger and saute well.
. When onion starts getting soft, add in the green peppers, turmeric powder and little salt and place a lid over so that the green pepper softens with the steam inside. Stir occasionally.
. Once the bell peppers are soft enough, add the cooked lentils and stir till all mixed well.
. To this add the shredded coconut and mix well and let on low flame , till water content is gone.
. Serve Hot.
