A simple dish that could be made easily and gets along as a great side dish along with any menu. You could have this along with rice or even with breads or could even use for stuffing purposes. Simple and easy, and tastes great too.
Serves – 3-4
Potato – 1/2 kg
Baby Onions sliced thinly – 1/2 cup
Garlic sliced thinly – 1 tsp
Ginger sliced thinly- 1 tsp
Crushed black pepper – 2 tbsp
Coriander leaves sliced- 3 tbsp
Mint Leaves sliced- 1 tbsp
Oil – 3 tbsp
. Clean the potatoes and cut them to small cubes. Boil them till cooked and keep aside.
. In a hot skillet, pour the oil and add the onions ginger and garlic and saute well till onion start to become tender and translucent.
. Add the pepper and salt and the potatoes and mix well.
. Keep on low fire, and give a stir occasionally.
. Once the potatoes are all almost fry, mix in the coriander and mint leaves and turn off flame.
. Garnish with coriander leaves and serve hot.
Since this does not require deep frying it is healthy and spicy too.
