These rice cakes are really simple and could be made within a few minutes. They are healthy and does not require much ingredients. Could be served as a snack or for even breakfast.
Serves – 3-4
Rice Flour – 2 cups
Cardamom – 5-6 pods crushed
Sugar – 1/2 cup
Salt – a pinch
Hot Water – 1 1/2 cups
. Boil water and keep aside. In a bowl, mix the rice flour, sugar, salt and cardamom along with the hot water.
. Mix it thoroughly till it makes a soft dough kind.
. Scoop a large spoon full of the dough and flatten onto a round rack. I used the rack that we make Idlis in South India. Or you could flatten with your palm and racks used in a steamer.
. Steam for about 5-7 mins.
. Garnish the way you like and serve hot.
Note : To make it more tastier, you could also add 1/2 cup desiccated coconut to this mixture , with a little more sugar.
