I wanted to make something different yet simple for my son`s b`day and I came up with this simple yet delicious recipe. It did not take much long to make. You have to make this one day before the part and let it refrigerate. Soft and creamy is what I could just say about this cake.
Serves – 6-7
Chocolate Cake Mix – 1 pkt
Eggs – 2 nos
Water – 3/4 cups
Oil – 1/4 and a lil more cup
Brown sugar – optional
For the Cream
Fresh Cream – 2 cups
Creamy Cheese – 1 cup
Icing Sugar – 1/4 cup
Gelatin – 3 tbsp
. Preheat the oven at 170C.
. Mix all the ingredients of the cake and mix with a spoon initially and then with a hand mixer mix till smooth on low to medium for 1-2 mins.
. On a oil sprayed bake tray or butter greased tray, pour the batter and bake till the cake is done. ( I did in a microwave for 3 mins ). Make two cakes as we need to sandwich the cream.
. In the meantime, in a bowl, add the cream and icing sugar and whisk well slowly without letting much air for 3-4 mins.
. To this add the creamy cheese and mix till blended well.
. Add the prepared gelatin to this mixture and mix well. ( Follow instructions on pack to make a gelatin mix)
. Once the cake is done and cooled thoroughly, place one layer of the cake and then top with the cream mix and then place the next layer.
. Top the cake with the remaining cream mixture and garnish with chocolate grates.
. Refrigerate overnight.
. Served Chilled.
