Rumali roti or known as Flat Thin Indian Bread is very common in restaurants and since it resembles a” Rumali” or a handkerchief, it is called as Rumali roti. This is the first time I`m making this and I was a bit scared whether it would be right. With little effort and patience, I made it there. It really is worth the effort you put in and it would e very similar to what yo get in restaurants. The side dish for Rumali roti could be anything of your choice.
Wheat Flour – 1 cup
All purpose flour – 1 cup
Rice flour – 1/2 cup
Oil or butter- 1 tbsp
Salt – 1/2 tsp
. Mix the wheat flour and all purpose flour with water and salt to make it to a soft dough. The dough has to be soft and not too watery.
. Keep to rest for about 10-15 mins.
. Roll medium size balls ( size of a large lemon) from the dough. Make this ball into two similar sized balls
. Flatten the balls first with your palm . Then apply some oil or butter on one side. To this side, spread some rice flour.
. Now place one ball over the other, where the side powdered with rice flour face each other. With the help of a rolling pin, flatten this to very thin sheets.
. Cook on a hot skillet on both sides.Brush oil or butter for a soft and smooth texture while cooking.
. Once done, separate the two sheets immediately as soon as you take it from the heat. You would get two from one make.
