Beetroots are very good vegetables. They are rich in potassium, iron, magnesium, vitamins and folic acids. Beets also contain carbohydrates, powerful antioxidants, proteins and soluble fiber. Beetroot juice is considered as a power drink as it supplements all the requirements. A great vegetable.
This recipe that I made is simple and does not take much time, moreover good with kids and those who are low in iron contents. Simple to make and good to taste.
Serves – 2-3
Beetroot – 2 medium sized finely grated
Grated Coconut – 1/2 cup
Onions – 1 medium size , finely chopped
Green chilly – 1 small finely chopped
Garlic – 2 cloves finely chopped
Ginger – 1/2 tsp finely chopped
Mustard Seeds – 1/ tsp
. Wash and grate the beetroot finely (You could take the help of a food processor and get all the choppings easily. ) and keep it aside.
. Process the onions, ginger, garlic and green chilly and keep it aside.
. On a hot skillet, add little oil.Once the oil is heated, add the mustard seeds and wait for them to crack.
. When seeds get cracked, add the onion mix, the grated beetroot, salt and pepper and mix well.
. Keep on low flame and once the beets are done, add the grated coconut and stir well.
. Simmer for about 5 mins and then take of flame.
A good side dish for Indian Bread or with rice.
( Remember, the curd should be added only after the entire dish is cooled )
