The other day, I was actually thinking what should I make for breakfast for my kids, so that they have all the nutrients in them and is healthy. That is when this instant thought struck my mind. I have earlier done this with macaroni this time i tries with Pasta and it did turn out good and they just loved it. It is really very simple and a great snack for kids as well well as grown ups.
Eggs – 4 nos
Shredded carrot – 1/4 cup
Shredded broccoli – 2 tbsp
Mayonnaise – 2 tbsp
Milk – 1 tbsp
Green Chilies – 2 nos sliced thinly
Pasta – 1 cup
Mozzarella cheese – 1/2 cup
Coriander leaves – for garnish
. Bring water to boil and add salt to it. Once water starts boiling, add the pasta and cook. As soon as the pasta is cooked, drain the water and rinse in cold water, so that further cooking is stopped and sprinkle a little oil to avoid it sticking. Keep this aside.
. In another bowl, add the eggs, broccoli, carrots ( not full, keep aside a little for garnishing) , milk, green chilies, salt and pepper and beat well with a whisker till fluffy.
. On a hot pan, pour the egg mix just enough for a single omelet ( or you can make it as a large pizza by pouring the entire mix on a large pan, I made it small so that kids find it easy to have ). Add pasta on top. Layer with mozzarella cheese and cover with a lid and cook on low flame.
. Once the cheese melts and the egg base is done. take of from heat and garnish with little shredded carrots and coriander leaves.

Note : You could mix and match any topping. Minced meat, sausages aything could be added to make it more heavier and tastier.
