Fish, is one menu that is almost present in every Keralite`s house on a daily basis. There are various kinds of dishes that could be prepared with fish, out of which the Red Color Curry is the most common and very tasty when had with hot rice. (Always use fishes that have more flesh for getting a good curry). To get the best flavor ,this should be made in the traditional mud pot. It is simple to make and try this one for yourself….
Fish – 500 gm
Small onions ( Madras onions ) – 1/4 cup
Green chilies – 3 nos thinly sliced
Garlic – 3 -4 cloves chopped finely
Ginger – 1 1/2 tsp chopped finely
Curry Leaves – a few
Mustard Seeds – 1 tsp
Fenugreek Seeds – 1 tsp
Chill powder – 2 1/2 tbsp
Turmeric powder – 1 tsp
Salt – 3/4 tbsp
Black tamarind – 3-4 pieces
Oil – 1/4 cup
Water – 2 1/2 cups
. Heat oil in the pot. Add the mustard seeds and fenugreek seeds . Wait for the cracking of these seeds. To this add the chopped onions, ginger, curry leaves ,garlic and green chilies and saute till the onion begin to tender and change color.
. In the meantime, make a paste of chilly powder and turmeric powder. Once the onions are done, add the chilly- turmeric paste and mix well. Once the mix gets blended well and the raw smell gets away, add water and give a stir.
. Add the salt and black tamarind ( wash the tamarind before hand ) and let the water get heated. To this add the fish pieces. Once the fish pieces are added, do not stir with spoon. The fish pieces should be submerged in water, but not very much.
. Cook on high flame for about 10-15 mins and them simmer the flame and cook for another 5-10 mins. Once the fish is tender and the water evaporates to half, put the flame off and cover with a lid.
. Do not serve immediately.Let it stand for about 1-2 hours for the flavors to blend together.
. Serve with hot rice.
