This is a recipe that I follow from my grandma, mother and now I am passing it on to my children …. A simple yet very tasty one. A good snack for the evening or when you have guests suddenly come in. Should try and check out how well it is.
Serves – 2-3
All purpose flour – 2 cups
Eggs – 1 nos
Milk – 1/4 cup
Water – 1/2 cup or add till the batter is smooth with no lumps
Grated Coconut – 1 1/2 cups
Sugar – 1/4 cup
Salt – a pinch
. In a bowl, add the flour, egg, milk, water and salt and mix well till a smooth batter is formed with no lumps.
. In another bowl, mix the grated coconut and sugar very well.
. On a hot skillet or pan, pour a big spoon full of batter and flatten it in circular motion. ( Similar to making the normal pancakes or dosas )
. Once one side is done, flip it and on this side place the coconut mix.
. Finally roll the base and take of from heat.
. Serve hot. You can either serve as full rolls or you could cut it into small pieces.
