This is a simple recipe and a very good combination for rice, chapatti, roti or even breads. Just takes a little time, yet a great side dish for any time of the day. I usually go in for this recipe, whenever I get some eggplant as this is most wanted at my home.
Serves – 4-5
Eggplants – medium Sized diced into cubes or length wise- 4-5 nos
Chilly powder – 1 1/2 tsp
Turmeric powder – 1 tsp
Garam Masala – 1/2 tsp ( just blend all the dried spices )
Tomatoes diced – 1/4 cup
Onions chopped finely – 1 cup
Green Chilly – 2-3 nos
Garlic – 3 cloves
Ginger – 1 tsp
Tomato Sauce – 2 tbsp
Soya Sauce – 1 tbsp
Coriander and mint leaves for garnish
. Marinate the eggplant with salt, 1/2 tsp chilly powder, 1/2 tsp turmeric powder and keep aside for 5-10 mins.
. Shallow fry the marinated eggplants.
. On a hot skillet, heal oil, saute the garlic and ginger first. When color changes add the onions, green chill and saute till soft and tender and color changes. Then add the tomatoes and stir till tender.
. To this add all the spices and stir well. Add the tomato and soya sauce and stir well. To this add the fried eggplants, and a little bit more salt.
. A little bit of water could be added, for easy mixing and allow to sit on low heat for a few mins.
. Once the water content has drained off and the whole mixture is slowly turning crispy, take off from heat.
. Garnish with Coriander and mint leaves.
. Serve hot. A great combination for a meal.
