I wanted to make something special and different for my hubby`s birthday and my sister`s wedding anniversary which is just a few days apart. A pleasant surprise, yet simple to make and that is when I happened to get this recipe. It is really simple and the outcome….. your cake vanishes in minutes…..lol…
Do try and see it for yourself
Condensed Milk – 1/2 tin
Milk – 1/2 cup
Butter – 75 gm ( 1/2 cup )
Powdered Sugar – 1 1/2 tbsp
Plain Flour – 1 Cup
Cocoa – 1/4 cup
Soda – bicarb – 3/4 level tsp ( I replaced this by a squeeze of 1/2 a lemon !! )
baking Powder – 3/4 tbsp
Vanilla Essence – 1 tsp
For the topping
Cocoa powder – 4 tbsp
Butter – 2 tbsp
Coffee – 1 tsp
Icing Sugar Sifted – 1 cup ( I replaced this with 1/4 tin condensed milk)
Chopped Walnuts or Almonds – 2-3 tbsp
Coke or any aerated drink – 1/4 cup for soaking.
. Sift the flour with cocoa powder, soda bicarb and baking soda and keep it aside.
.Mix sugar and butter.Beat till fluffy. Then add the condensed milk and beat well.
.Add the milk and essence to this and then add the sifted dry ingredients and beat well for 3-4 mins or till the mixture is smooth and light.
. Transfer to a greased deep dish and microwave for about 4-5 mins and not more.
. Once cooled, cut the cake into two vertically and soak in the aerated drink.
. For the topping , microwave 4 tbsp of water in a bowl for a minute. To this add coffee mix. Add cocoa and butter to it and mix well.
.Return to microwave and microwave at 70% power for a minute or till butter melts. gradually add the icing sugar and mix well.
. Glaze the cake with the icing and form peaks with spoon.
. Decorate with the chopped nuts.
. refrigerate and serve chilled.
. if not using icing sugar and only the condensed milk for the icing, then need not microwave for the butter to melt,as a through mixing would form a good mix for the icing.
. For making the cake, in the absence of sodium bicarb, just a squeeze will do and not the full juice of the lemon half. This is for the softness of the cake since it is being microwaved.
Enjoy the chilled cake and to make it more delicious, serve along with a scoop of ice-cream.
