Christmas is round the corner and preparations for Christmas have already begun. try this simple and easy recipe for baking a fruit cake and you could present it for your loved ones this season.
Baking Soda – 1 tsp
Sour Cream – 1 cup
Chopped Dates – 1 cup
Raisins – 2 cups
Chopped glazed cherries – 1/2 cup
Chopped walnuts or almonds – 1/2 cup
All purpose flour – 2 cups
Butter – 1/2 cup
Granulated Sugar – 1 cup
Eggs – 1 nos
Orange zest – 1 tbsp
Salt to taste
. Preheat the oven to 325F. In a small bowl mix the baking soda and the sour cream and set aside.
. Combine the dates, cherries, nuts, with 1/4 cup flour and toss to coat the fruit and nut.Keep it aside.
. Cream together the butter and sugar. Mix in the egg, then the orange zest, then the baking soda mixture. Add the flour and salt and mix well.
.Combine the fruit nut mixture with creamed ingredients and mix well to distribute the fruit and nuts evenly.
. Pour the batter into a prepared loaf pan and bake or about 1.5 – 2 hours or till the cake is done.

Note – There are many ways of making a fruit and nut cake and preserving them. If you want to make them the old fashioned way, then it requires many days.The fruits have to be soaked in rum and refrigerated for 2-3 days and then once the cake is baked, sprinkle some more rum or brandy for getting it more soft. The preserving also could be done in many ways of which the best is to wrap your cake in a thin sheet coated with icing, which preserves the cake for long.
