This cake was one among my first trials and it was a great success. I was wondering what I could make different my daughter`s Birthday and I was short with time. That is when I thought about doing an experiment and I did a trial the day before the D-day.
On the D-day, I gave a shot with all my courage and the outcome was great.
Serves – 7-8
Large eggs – 4 nos
Powdered Sugar – 1 1/2 cup ( sugar has to be powdered. otherwise it burns )
All purpose flour – 1 cup
Baking powder – 1 1/2 tsp
Cocoa powder – 4 tbsp
Milk – 1 cup
Oil – 1 cup
Vanilla Essence – 2 tsp
. Sift the flour and baking powder and keep it aside.
. Beat the eggs and sugar till it becomes fluffy and the mixture gets more than double.
. Add the essence. cocoa powder and oil and mix well to this egg mixture.
. Fold in flour gradually till all the flour is used. Add milk to get a thinner consistency.
. Grease a deep microwavable bowl. Pour the batter and microwave uncovered for 4 minutes at high. Do not microwave for more even if the center appears wet.
. Let it stand for 4-5 mins. Allow to cool.
. For the topping, I used whipped cream and sugar.
.I even made the same cake with chocolate sauce. But it is very rich and if you are truly a chocolate lover, then the chocolate sauce is the better choice. Otherwise the cream gives a perfect balance of the sugar content.
