These tarts are creamy, fresh and bright, just like how their name suggests. they are easy to make a good snack, especially for kids….
Serves – 15-20
Tart Shells that are readily available or even you could make them.
To prepare tart shells:
All purpose flour – 2 1/2 cups
Eggs – 1 nos
Sugar – 1/4 cup
Yeast – 1 tsp
Milk – 1 cup
For the Filling:
Goat Cheese – 250 gms
Granulated Sugar – 1/2 cup
Vanilla extract – 2 tsp
Eggs – 2 nos
Sour cream – 2/3 cups
Fruits mixture, fully blend and chopped – 500 gms
Honey – 2 tbsp
Finely grated orange zest – 1 tbsp
For the crust
. Either a pre prepared crust or if you wish to prepare on your own you could combine the first set of ingredients and make it into a dough and allow to stand for some time.
.Once fluffy, make a flat sheet and then cut small circles using a cookie cutter. Place them on oil sprayed cup cake trays and bake for about 8-9 mins and cool.
.Beat the goat cheese with sugar and vanilla until just combined.Stir in sour cream.
. Divide the mixture among the tart shells.Bake on bottom rack for 15 mins and the cool to room temp.Toss fruits with honey and orange zest.
.Chill the tarts and divide the fruit salsa among the tarts before serving.
A real yummy tart and loved at each bite.
