This is a fabulous dessert to serve for any occasions and is loved by all.
All purpose flour – 3 cups
Cold butter – 1/20 cup
Lard – 1/2 a piece
Eggs divided – 2 nos
Lemon juice – 1 nos
Lemon Zest – 1 lemon
Granulated Sugar – 3/4 cups
Corn starch – 1/4 cup
Vanilla Extract – 1 tbsp
Sweet Cherries – 1 cup
Milk – 1 tbsp
Salt – a pinch
For the extra glaze( optional ) – 2/3 cup icing sugar.
. Pulse flour, butter, lard , and salt in a food processor till crumby.Whisk 1 egg with 1 tsp lemon juice, add enough ice water to make 2/3 cups.
. Add to the dough and mix till, the dough comes together.Flatten it into disk shape and chill for about 30 mins.
. Preheat oven to 375 F. On a well floured surface,roll dough into a large rectangle, about 1/8 inch and 3 mm thick and carefully make it into a perfect rectangle and place it into a baking tray.
. Stir sugar with cornstarch and lemon zest until combined.Sprinkle half of the mixture evenly, done the length of one side of the rectangle, leaving a 1 inch border.Arrange cherries evenly over the sugar mixture.Whisk 1 tbsp vanilla with lemon juice and drizzle evenly over the cherries.Sprinkle the remaining sugar mixture evenly on the top.
. Fold the dough over to cover the filling.Fold an additional 1/2 inch dough from bottom layer to the top along the edges and crimp with the fork to seal.With the remaining egg, just give a egg wash on top of the pastry and make a few vent holes for the pastry to get baked.
. Bake for about 50-55 min, or till baked. Serve when cooled.For the optional glaze, blend the icing sugar with milk.Drizzle evenly over the cooled pie.
