A perfect salad for all the crab lovers. A great filling for any meal of the day.
Serves – 3-4
Fresh lump crab meat – 1 1/2 cups
Chopped, roasted hazelnuts – 1/4 cups
Finely chopped celery – 1/2 cup
Firm sweet pears – 2 nos
Finely chopped red onion – 1/4 cup
Freshly chopped parsley – 2 tbsp
Lemon Juice – 2 tbsp
Olive oil – 1 tbsp
Lettuce – 4 large pieces for serving
. In a medium sized bowl, mix the celery, hazelnuts, pear, onions, lemon juice, parsley, olive oil, pepper and salt.
. Gently fold in the crab meat, taking care that the meat does not break up too much.
. Make individual servings or on a flat plate on big lettuce leaves.
