A great cookie which fits into any part of the year.For all those chocolate lovers, this is a munchy, yummy cookie. A great hit among children.
Serves – 10 -15
Unsweetened Cocoa powder – 1 cup
White Sugar – 1 1/2 cups
Vegetable Oil – 1/2 cup
Eggs – 4 Nos
Vanilla Extract – 2 tbsp
All purpose flour – 2 cups
Baking powder – 2 tbsp
Salt – 1/2 tsp
Confectioners Sugar – 1 cup
Espresso powder – 1 tsp
. Beat the cocoa powder, white sugar and vegetable oil, un-till it becomes a shiny, creamy dough.
.Add the eggs one at a time and mix thoroughly. Add the vanilla extract.
. In a separate bowl, whisk together the flour, baking powder, salt and espresso powder.
. Mix the chocolate mixture into this and mix well till combined.
. Cover with a plastic and refrigerate for about 4 hours or overnight.
. Preheat the oven to 350F and line two baking trays with parchment paper.Roll small balls from the dough prepared using hands and then roll them in the confectioner`s sugar and place them on the baking tray.
. Bake for about 10-12 mins.Remove, cool and then serve.
