A wonderful salad that could be had for a brunch or even could be served along with breads and rolls. A great filling for the day.
Hard Boiled eggs – 10-12 Nos
Mayonnaise – 1/3 cup
Dijon Mustard – 2 tbsp
Chopped fennel – 1/2 cup
Red Pepper – 1/2 cup
Onions Chopped – 1/2 cup
fresh Tarragan Leaves – 1/4 cup
. Combine all the ingredients well and season with salt and pepper.
. Either serve it alone or over lettuce leaves or could be served as sandwich fillings.
. The tarragon gives the extra punch to the salad , when added.
A perfect salad for the day.
