A wonderful blend of the carrot and the apple cake which leaves us carving for more after every bite.
Serves – 9-10
All purpose flour – 2 cups
Granulated Sugar – 1 1/2 cups
Baking Soda – 2 tsp
baking Powder – 1 1/2 tsp
Ground cloves and nutmeg – 1/4 tsp
Unsweetened Cocoa powder – 2 tsp
vegetable Oil – 1 Cup
Large Eggs – 4 nos
grated Carrots – 1 1/2 cups
Grated Apples – 1 1/2 cups
Walnuts – 1 cup
For the frosting
Fresh Mild Goat Cheese – 5 oz
Cream Cheese – 4 oz
Butter – 1 tsp
Vanilla extract – 1/2 tsp
Powdered Sugar – 1 cup
Salt and pepper – a pinch
. Pre- heat the oven to 350 F. In a bowl combine the flour, granulated sugar, baking soda , baking powder , spices, cocoa, pepper and salt. Whisk to combine well.
. To this add the eggs , oil, carrots, apples, and walnuts and whisk well till all ingredients are blended well.
. Set cup cake holder in muffin tin. Spoon the batter into the cupcake paper to about 3/4 and bake for about 20 minutes.
. Beat the goat cheese, cream cheese, butter, and vanilla until smooth and fluffy. Gradually add the powdered sugar and mix till combined well.
. Once the cake is done and is cooled, serve by applying the frosting.
