1. EGGS ITALINO– A wonderful recipe made from eggs and vegetables for a whole breakfast. The recipe is illustrated below:
Ingredients – ¼ cup water, 2 tsp extra virgin olive oil , 1 clove garlic, 1 shallot, 12 ounces plum tomatoes, 3 tbsp basil, 1 tbsp balsamic vinegar,, ½ tsp salt, freshly ground pepper, 8 large eggs, 4 slices whole wheat bread, 2 tbsp freshly grated Parmesan cheese
Method – In a hot pan , add oil and cook the shallots and garlic until fragrant, Stir in the tomatoes and cook, stirring occasionally. Remove from heat and add the vinegar, basil, salt and pepper.
In another pan boil water and add vinegar to it. Reduce the heat. Crack each egg into a bowl carefully, without breaking the yolk and slip them carefully into the boiling water. Cook for about 4 mins on soft set and then transfer the eggs to a kitchen towel for drying.
To serve, on a slice of bread, top with the vegetable mixture, top it with the egg and the grated parmesan cheese and a few basil.
2. TACO RECIPE Another simple yet a filling for the day with eggs.
Ingredients – 2 corn tortillas , 1 tbsp salsa, 2 tbsp shredded cheese, 2 eggs
Method – Top the tortillas with cheese and salsa and microwave till cheese melts. In the meantime, in a hot non stick pan, spray some oil and break the eggs. Scramble them good.
To serve, divide the eggs in between the tacos and serve. ( You can fill the taco with any food of your choice)
3.Mixed fruit yogurt Smoothie – What a wonderful way to have a simple yet delicious breakfast.
Ingredients – ¼ cup milk , ¼ cup low nonfat yogurt , ¼ cup water , ½ cup frozen mixed fruit , 1 tbsp dried oatmeal.
Method – Put all the ingredients together in a blender and add water if a thinner consistency is preferred. Blend well and have it chilled.
4.Easy Black bean and rice – A good and healthy start with low calories and high in fiber.
Ingredients – 1 tbsp extra virgin olive oil , 1 cup cooked brown rice , 1 can ranch style black beans, 1 can diced tomatoes with chilies.
Method – Cook rice using 1 tbsp olive oil. In a large pan, add the beans, tomatoes and chilies. Season with spices, if desired. Add the cooked rice to it and mix well. I desired, serve with cheddar cheese.
